ilk Pils
American Pilsner - 4.8% ABV

No, this ain’t no beer for the banquet, nor is it a beer for your high life! It’s an honest and true pilsner made with American grown malt and brewed with a touch of corn grits, Yakima valley Adeena hops and some rotating German hops. Crisp and clean, herbal and lightly fruity, bitter and well balanced.

ilk WC IPA
West Coast IPA- 6.6% ABV

Fitting somewhere between a Juicy IPA, a classic WCIPA and the new hazy WCIPA, our Ilk IPA fits nicely in the pocket of what we all are calling American IPA. Slightly hazy and firmly bitter, our IPA features Citra and Mosaic hops with a couple of rotating classic or modern IPA hops.

ilk Pale
Modern Pale Ale - 5.2% ABV

Made with a blend of pils and pale malts along with hit of flaked oats, our modern pale is a lightly hazy, straw colored beer hopped and dry hopped with a not so sensible amount of Citra, Cascade and Galaxy. A light drinking but full bodied hopped up pint after pint experience!

Meant for more than just fulfilling a New Year resolution, our Hop Water is made to carry on with us throughout the year! A hoppy, refreshing and ultimately satisfying sparkling water meant for times when a beer isn’t the answer and something sweet and soda is just too much. Made with our house brewing water and featuring a rotating blend of hops and fruit flavors for a balanced but punchy aroma and present but not overwhelming taste.

Oatmeal & Oyster Stout - 4.8% ABV

Brewed with a full pallet of amber, toasted and roasted malts, some random hops and damn near a bed full of whole oysters from our buddies at Hama Hama Oyster Company! Smooth, Bivalved, Desire.

Totten’s Best Bitter
English Style Bitter Ale - 4.1% ABV

Bitter in name only, this traditionally
made English style pale ale is brewed with a generous amount of Simpsons Maris Otter as well as several Simpsons crystal malts and a touch of malted spelt. Hopped exclusively with Brewers Gold, open fermented with our favorite Yorkshire ale yeast and naturally conditioned to a soft carbonation.

ilk Milk
Milk Stout - 4.4% ABV

Our second label with our good buddy and local Oly art legend Larissa Podzaline! For this round we all decided to go with a milk stout because, well, so many ways to take that idea visually! We kept it really simple and real satisfying, made with English Maris Otter as a base and Crisp Chocolate malt as well as some dehusked black malt to keep the roast character real smooth. A touch of lactose and fermented open with our English ale strain, carbed soft for the smoothest milk drink around!

Color Out of Space
Hazy IPA - 6.6% ABV

Our space to play with hops in the haze! We keep the malt to a minimum focused on body and mouthfeel thanks to generous helpings of oats and wheat. This round we went with a bright trio of Rakau, Citra and Nelson resulting in a gush of tropical fruit flavor!

Lawn Darts
Summer Rice Lager - 4% ABV

Is it light, yup. Refreshing? Yeah. Crispy, duh! For this tasty little Summer quencher, we cereal mashed a couple hundred pounds of Calrose rice then step mashed that with the palest pils malt we could find for an ultra-pale and bright beer. Hopped exclusively with Roy Farms Adeena hops, fermented cold and lagered colder, it’s the beer we wish we could have been stealing from our lawn dart tossing uncles when we were kids!

Sofa King Mike
Summer IPA - 6% ABV

You know Mike right? Yakow Mike, NWS, Mike right?!? If not, you need to visit Oly and meet Mike! Cause we made this Summer crusher for him and for Oly and for all ya! Loads of Citra, Simcoe and Riwaka is our idea of a Summer quencher! Light in body thanks to the palest LINC Malt pils, plus a touch of flaked corn and fermented with lager yeast for the crispy!

Fluid Diet
Modern Pale Ale - 5.2% ABV

For the last couple of years we have been making these lighter in color, lower in ABV and new school hopped pale ales but never had a good way to describe them. So, Modern Pale seemed to capture the idea. Made with a blend of Pils and pale malt, some flake grains and a base of Mosaic and Vic hops, with a rotating third hop just to keep it changing. Fermented with our house Yorkshire ale strain, the beer retains a larger body than it’s mild ABV suggests.  So modern!

Villarreal
MexiMerican Lager - 4% ABV

Pat’s been making a version of this beer for the last couple decades. It represents the beer his mama’s side of the family - the Villarreals, Salazars, and Marquezes - would drink at any and all family get-togethers, from reunions to wakes, graduations to house parties. Like food, beverage is usually the last part of a culture to assimilate and with this beer, we’re happy to keep holding out with ya all! Made with a cereal mash of a third maze grits, third Vienna malt, and a third pils, and hopped with enough Saaz to make it drink right, lime or no! AND.. we do like lime in the glass, not the can around here!

Grazzma the Reliever
Spelt Pilsner - 4.6% ABV

No pils should be this silky smooth! We owe the mouth filling texture on this beer to our collab partners, LINC Malt, who provided us with Moon Family Farm Elwah River spelt Malt. That along with a goodly amount of Steffi Pils round out the texture of this Salmon Safe beer. We hopped it with a generous amount of Crosby Hops Crystal and Triumph for a relieving bitterness and citrus, pine and herbal qualities.

Hefe Lies the Head that Wears the Crown
Hopfenweisse Style Hefeweizen - 5% ABV

Grainmaker 2026 collab with
Watts Brewing Co.

We teamed up with Watts Brewing to make this balanced tribute to both the malts of the PNW as well as the hops. Made specifically for the Grainmaker Festival in Spokane, this light fruity take on a traditional German style Hefeweizen is amped up through the use of a Dolcita dry hop addition to compliment the banana and clove notes with creamy peach rings and tropical fruit tones! Hopfenweisse is a beer meant for Summer.

Zealandia
Hazy NZ IPA- 5.9% ABV

Made with Linc Malt Steffi Pils and flaked oats, flaked barley and corn, double dry-hopped with Hop Revolution Rikawa, Waimea and Moutere, fermented with an English strain, so much fluff! Loads of tropical fruits like loquat, lychee and rock melon, something like that...

Pine Street Bombers
Piney Pale Ale - 4.5% ABV

We made this piney, kinda clear, beer for our buddies at 35th N skate shop in Seattle. The goal was a crusher hanging out and bombing the streets beer and we think we pretty much hit the spot! Brewed with pils, wheat and a touch of Vienna malt and hopped liberally with Centennial and Chinook, followed by more Centennial and Chinook and bigly amount of Eldorado in the dry hop! Piney but balanced with that touch of Eldo fruitiness. And featuring art by the incomparable Sasha Barr!

Thora’s Hammer
Juicy IPA - 6.4% ABV

Thora’s Hammer is our collaboration with Crosby Hops’ Top Wire Beer Club, showcasing Thora, a booming new public hop variety developed by Crosby and the Hop Quality Group. Estate grown Amarillo and Cascade providing a classic big pine and citrus base, and dry hopped with loads of whole leaf Thora, yielding a tropical stone fruit thunderstorm! Thora's Hammer is soft and almost clear, drinking somewhere between a modern West coast and something more East.

Seek and Enjoy
Hazy Double IPA - 8% ABV

While we never swore off making double IPAs and other big beers, we certainly haven’t spent much time dabbling anywhere north of six and half percent. Seek and Enjoy more than makes up for the wait! Made with a malt bill of malted and flaked wheat, flaked oats and a touch of pils malt. We triple dry hopped this ultra-pale haze bomb with crazy amounts of Citra and Nelson and fermented it with our unique house English strain. This beer is a saturated ride for the senses!

Helsing Junction
Barrel Aged Saison- 5.8% ABV

Helsing Junction is a long term, solera style, barrel aging project originally begun at Helsing Junction farm in 2010. The beer and blending practice were carried forward to Three Magnets Brewing where oak barrels were added to the program. We picked it up here at ilk in 2024 and are excited to release our first blend! Over 16 years of beer make up this very special blend. This year we blended the barrels with a simple Saison made up of pils and wheat malt, Strisselspalt hops and a couple Belgian Saccharomyces strains of yeast. The beer is dry but beguilingly fruity with a soft tartness, spicy aromatics and a spritzy character.

We Used 2 Be Cool
Cold/WC IPA - 7% ABV

Though we make IPA with lager yeast pretty regularly, we haven’t taken a shot at a true, Kevin Davies, rendition of the style. Made with a load of pilsner malt and cereal mashed with rice, the beer is then plied with Riwaka and Citra hops, with a healthy dose of Chinook Hyperboost in the fermenter, followed by even more Riwaka and Citra in the dryhop! Fermented cool, but not cold with a classic German lager yeast this beer is oh so crispy and deeply layered with hop expression!

Hechizo de Hambre
Mexican Dark Lager - 4.4% ABV

The undisputed champ of North American dark lagers, the ubiquitous Negra Modelo is our inspiration for Hechizo de Hambre! To many of us, this was our first dark beer and hands down the only dark lager we would have drank before the craft beer boom opened the floodgates of Czech dark this and Oktoberfest that. Brewed with Vienna malts and flaked corn with a tiny pinch of debittered black malt, fermented cold with our house Mexican lager strain, cold stored and naturally carbonated. This is our craft take on the classic and yes, drinking one will leave you hungry!

Victory Nap
WC Pale - 5.2% ABV

Collab with Bizarre and Holy Mountain

Our good buddies at Sisters and Brothers are turning ten and we had to make a beer about it!  But we didn't go it alone. We got together with a couple of our favorite Seattle breweries, Bizarre Brewing And Holy Mountain and settled in on a dry and crisp west coast pale pushing into XPA territory! Made with pils malt, Simcoe and Riwaka hops, and cool fermented, this beer is easy and refreshing while delivering big hop aroma. We can't wait to wash down so many Nashville Hot tenders with it!

Hollow Way
Pale Ale - 5.6% ABV

Hollow Way is inspired by the pale ales of the twenty teens, unarguably the era of the craft beer boom! Made with a small amount of Vienna malt and flaked wheat and hopped and dry hopped with a generous amount of Simcoe, Nelson Sauvin and Comet. Dry, clearish and clean, the way pales used to be! With rad label art by David V. D’Andrea!

Reunited…And it Feels So Good
Hazy IPA - 7% ABV

Collab with Mt. Olympus Brewing

It really does feel good! We made this saturated juice bomb with our buddies out of Aberdeen, as a bit of a reunion beer. Loaded with Citra, Vic, Nelson and a phat dry hop of tangerine bomb Chinook, the beer smells as good as it looks, as good as it tastes!

The Long Pour
Oly Steam Beer - 5% ABV

IThe Long Pour is what happens when a couple of coolship fermenters fall into your lap! Steam beers, also known as California common, were made for a century up and down the West Coast, but are brewed mostly as a novelty now that Anchor Brewery in San Francisco closed. Our take is fermented in shallow open pans with a traditional steam yeast at cool temperatures then conditioned cold to allow natural carbonation to develop, yielding an amber, herbal and dry lager.
