ilk Pils
American Pilsner - 4.8% ABV

No, this ain’t no beer for the banquet, nor is it a beer for your high life! It’s an honest and true pilsner made with American grown malt and brewed with a touch of corn grits, Yakima valley Adeena hops and some rotating German hops. Crisp and clean, herbal and lightly fruity, bitter and well balanced.

ilk WC IPA
West Coast IPA- 6.6% ABV

Fitting somewhere between a Juicy IPA, a classic WCIPA and the new hazy WCIPA, our Ilk IPA fits nicely in the pocket of what we all are calling American IPA. Slightly hazy and firmly bitter, our IPA features Citra and Mosaic hops with a couple of rotating classic or modern IPA hops.

ilk Pale
Modern Pale Ale - 5.2% ABV

Made with a blend of pils and pale malts along with hit of flaked oats, our modern pale is a lightly hazy, straw colored beer hopped and dry hopped with a not so sensible amount of Citra, Cascade and Galaxy. A light drinking but full bodied hopped up pint after pint experience!

Ether Fuzz
NE Style Double IPA - 8.2% ABV

“The waves roll through the ether fuzz forever!” Beer two with our friend and renowned artist Missy Maxwell! For this round we paired up a bright luscious NE DIPA with the stoically, unmoved, cannibalistic Leatherface in this Halloween tribute to Texas Chainsaw Massacre. But the beer? Loads of Motueka, Mosaic and Rakau paired up with pillowy flaked oats and wheat, more malted wheat and finally, the palest pilsner malt we could find. Fermented with a unique English ale strain leaving behind a perfect balance of drinkability and sweetness.

Spare Time in Bodega Bay
Fresh Kilned Red IPA (Clear) - 6.8% ABV

Made with Linc Malt Pils, Simpsons crystal malts and flaked barley and hopped with Centennial and Fresh Kilned Cascade fermented with an English ale strain, juicy, grassy, caramel, clean and dry.

Dolcita & Citra
Modern Pilsner - 4.8% ABV

An end of the hop harvest treat! We used both fresh Citra and Dolcita hops along with the same pellets and some German Northern Brewer to make a pilsner akin to the West Coast Pils, but smaller and much more crushable! Utilizing 100% pils malt and fermented cold with one of our favorite German lager strains, this beer is oh so hoppy popping with fresh cuts of tropical citrus, and creamed peaches!

Hours
German Style Hefeweizen - 5.2% ABV

Brewed with large amounts of malted wheat and pilsner malt and fermented with a classic German weis yeast strain, Hours Hef is our ultra traditional take on a German hefeweizen. A soft pillowy body, loads of banana esters and clove phenols and haze for days are all the hallmarks of a true hef!

Fresh Kiln Mosaic
West Coast IPA - 6% ABV

Made with Linc Malt Francin Pils and flaked wheat, flaked barley and flaked oats, hopped exclusively with Roy Farms freshly kilned Mosaic and freshly pelleted T-90 Mosaic, oh, also it's a cold IPA, it's all Mosaic!

Remember the Porter
English Porter - 4.6% ABV

“Here’s a knocking indeed!” We finally made a porter! And true to fashion, this is not a big modern American porter but instead, a smaller more reserved English take on the style. Made with a goodly amount of Maris Otter, flake barley, amber and chocolate malts, fermented open with a clean English yeast and naturally conditioned to a soft carbonation. A rich but still dry drink with a malty, softly roast finish. “I pray you, remember the porter.”

Yacht Metal
West Coast IPA- 6.8% ABV

In these dark winter months, let Yacht Metal remind you of your favorite Summer soundtrack! Filled with tasty pilsner rifs, the rippin Amarillo solos, the brightest Mosaic falsetto and powerst of power ballads of Strata!  A mild and wild West Coast IPA like no other!

Love as Lager
Corn Lager - 4.4% ABV

A beer made for our friend and damn near family member, Sam
fucking Jayne! Sam helped lay the path for the northwest’s other, not so grunge, 90’s Indy music scene showing the kids how to go out and do your thing and have fun doing it through his raucous Love As Laughter! Though Sam is missed,
he’s definitely not gone and we made this beer to drink with him in some crosseyed beautiful place.

Totten’s Best Bitter
English Style Bitter Ale - 4.1% ABV

Bitter in name only, this traditionally
made English style pale ale is brewed with a generous amount of Simpsons Maris Otter as well as several Simpsons crystal malts and a touch of malted spelt. Hopped exclusively with Brewers Gold, open fermented with our favorite Yorkshire ale yeast and naturally conditioned to a soft carbonation.

Zealandia
Hazy NZ IPA - 5.9% ABV

Made with Linc Malt Steffi Pils and flaked oats, flaked barley and corn, double dry-hopped with Hop Revolution Rikawa, Waimea and Moutere, fermented with an English strain, so much fluff! Loads of tropical
fruits like loquat, lychee and rock melon, something like that...

We Used 2 Be Cool
Cold IPA - 7% ABV

Though we make IPA with lager yeast pretty regularly, we haven’t taken a shot at a true, Kevin Davies rendition of the style. Made with a load of pilsner malt and cereal mashed with rice, the beer is then plied with Riwaka and Citra hops, with a healthy dose of Chinook Hyperboost in the fermenter, followed by even more Riwaka and Citra in the dryhop! Fermented cool, but not cold with a classic German lager yeast this beer is oh so crispy and deeply layered with hop expression!

Plenty Dark
Coffee Dark Lager - 4.2% ABV

We’ve wanted to make a beer with our buddies at Outer Dark Coffee for a good while now but kept holding off as we wanted the first go to be the perfect beer coffee presentation. When we put a Macro dark lager into the schedule it was obvious this was the beer we’d been looking for! Made with Outer Dark Winter Solstice single origin Rwanda coffee, the beer presents with a full coffee nose and follows with complex layers of cold brew and crisp lager ending making a very quaffable beer.

Meant for more than just fulfilling a New Year resolution, our Hop Water is made to carry on with us throughout the year! A hoppy, refreshing and ultimately satisfying sparkling water meant for times when a beer isn’t the answer and something sweet and soda is just too much. Made with our house brewing water and featuring a rotating blend of hops and fruit flavors for a balanced but punchy aroma and present but not overwhelming taste.

Rubedo 13
Czech Red Lager - 5.2% ABV

We’ve been enjoying Packwood Brewing's Nat Woodsmith’s beers since the old days when he brewed at the now defunct Powerhouse in Puyallup. So when we got together to make a beer, we decided to really go for it in the nerdiest brewer way possible. Double decocted and cold fermented, made with Czech malts and Saaz hops, Rubedo 13 is our faithful take on the Polotmavy style Czech lager. Amber into red and malt forward while still hoppy, rich but still oh so drinkable, a perfect beer for the season!

Pine Street Bombers
West Coast Pale Ale - 4.5% ABV

35th North Skate Shop

We made this piney, kinda clear, beer for our buddies at Thirty Fifth North skate shop in Seattle. The goal was a crusher hanging out and bombing the streets beer and we think we pretty much hit the spot! Brewed with pils, wheat and a touch of Vienna malt and hopped liberally with Centennial and Chinook, followed by more Centennial and Chinook and bigly amount of Eldorado in the dry hop! Piney but balanced with that touch of Eldo fruitiness.

Villarreal
MexiMerican Lager - 4% ABV
2025 WA Beer Awards Gold Medal

Pat’s been making a version of this beer for the last couple decades. It represents the beer his mama’s side of the family - the Villarreals, Salazars, and Marquezes - would drink at any and all family get-togethers, from reunions to wakes, graduations to house parties. Like food, beverage is usually the last part of a culture to assimilate and with this beer, we’re happy to keep holding out with ya all! Made with a cereal mash of a third maze grits, third Vienna malt, and a third pils, and hopped with enough Saaz to make it drink right, lime or no! AND.. we do like lime in the glass, not the can around here!

Hollow Way
West Coast Pale Ale - 5.6% ABV

Hollow Way is inspired by the pale ales of the twenty teens, unarguably the era of the craft beer boom! Made with a small amount of Vienna malt and flaked wheat and hopped and dry hopped with a generous amount of Simcoe, Nelson Sauvin and Comet. Dry, clearish and clean, the way pales used to be! With rad label art by David V. D’Andrea!

Shuck Around and Find Out
Oatmeal & Oyster Stout - 4.8% ABV

Brewed with a full pallet of amber, toasted and roasted malts, some random hops and damn near a bed full of whole oysters from our buddies at Hama Hama Oyster Company! Smooth, Bivalved, Desire.

Moon Bog
Hazy IPA - 5.8% ABV

We made Moon Bog to feature a couple of The Hop Quality Groups experimental hops being grown at Crosby Hops in Oregon. HQG 1 and HQG 3 combine in this visually thick but drinkable lite beer bringing loads of peach and apricot aside tropical fruit punch. We are loving what HQG is doing and look forward to working with their future releases!

Hecate’s Helles
Pale Lager - 5.2% ABV

Hecate’s Helles is our lager of choice for the darker months; named for the Greek goddess of darkness, crossroads, magik and dogs! We (magically) decocted a goodly amount of North American grown Old World pils malt and gently hopped it with a combo of Saaz and Mittelfrüh, fermented it cold with a blend of Dutch lager yeast and darkly cold conditioned it for an unnatural carbonation!
