THESE ARE SOME OF OUR BEERS...

12 oz cans!

ilk Pils
American Pilsner - 4.8% ABV

No, this ain’t no beer for the banquet, nor is it a beer for your high life! It’s an honest and true pilsner made with American grown malt and brewed with a touch of corn grits, Yakima valley Adeena hops and some rotating German hops. Crisp and clean, herbal and lightly fruity, bitter and well balanced.

[MOST RECENT PACKAGING: 5/20/26]

ilk WC IPA
West Coast IPA- 6.6% ABV

Fitting somewhere between a Juicy IPA, a classic WCIPA and the new hazy WCIPA, our Ilk IPA fits nicely in the pocket of what we all are calling American IPA. Slightly hazy and firmly bitter, our IPA features Citra and Mosaic hops with a couple of rotating classic or modern IPA hops.

[PACKAGING AGAIN: 6/3/26]

ilk Pale
Modern Pale Ale - 5.2% ABV

Made with a blend of pils and pale malts along with hit of flaked oats, our modern pale is a lightly hazy, straw colored beer hopped and dry hopped with a not so sensible amount of Citra, Cascade and Galaxy. A light drinking but full bodied hopped up pint after pint experience!

[PACKAGING AGAIN: 6/3/26]

ilk Hop Water
Hop Water -
0% ABV

Case
24x 12 oz cans  $30

Meant for more than just fulfilling a New Year resolution, our Hop Water is made to carry on with us throughout the year! A hoppy, refreshing and ultimately satisfying sparkling water meant for times when a beer isn’t the answer and something sweet and soda is just too much. Made with our house brewing water and featuring a rotating blend of hops and fruit flavors for a balanced but punchy aroma and present but not overwhelming taste.

Zealandia
Hazy NZ IPA - 5.9% ABV

Made with Linc Malt Steffi Pils and flaked oats, flaked barley and corn, double dry-hopped with Hop Revolution Rikawa, Waimea and Moutere, fermented with an English strain, so much fluff! Loads of tropical
fruits like loquat, lychee and rock melon, something like that...

[PACKAGED: 12/17/25]

Totten’s Best Bitter
English Style Bitter Ale - 4.1% ABV

Bitter in name only, this traditionally
made English style pale ale is brewed with a generous amount of Simpsons Maris Otter as well as several Simpsons crystal malts and a touch of malted spelt. Hopped exclusively with Brewers Gold, open fermented with our favorite Yorkshire ale yeast and naturally conditioned to a soft carbonation.

[PACKAGED: 12/5/25]

Remember the Porter
English Porter - 4.6% ABV

“Here’s a knocking indeed!” We finally made a porter! And true to fashion, this is not a big modern American porter but instead, a smaller more reserved English take on the style. Made with a goodly amount of Maris Otter, flake barley, amber and chocolate malts, fermented open with a clean English yeast and naturally conditioned to a soft carbonation. A rich but still dry drink with a malty, softly roast finish. “I pray you, remember the porter.”

[PACKAGED: 12/3/25]

Salazar Family Lager
Amber Corn Lager - 4.4% ABV

Brewer Pat: “This is a take on one of my favorite beers, the Amber Mexican Lager. It’s another beer we enjoy on my Ma’s side of the family and is named for all them Salazars at all them parties! Just some Vienna malt and corn and pinch of dark malt. Pop a lime in it or don't, speak Spanish or don't, it doesn't care. Just don't miss out!”

[PACKAGED: 4/8/26]

ilk Milk
Milk Stout - 4.4% ABV

Our second label with our good buddy and local Oly art legend Larissa Podzaline! For this round we all decided to go with a milk stout because, well, so many ways to take that idea visually! We kept it really simple and real satisfying, made with English Maris Otter as a base and Crisp Chocolate malt as well as some dehusked black malt to keep the roast character real smooth. A touch of lactose and fermented open with our English ale strain, carbed soft for the smoothest milk drink around!

[PACKAGED: 4/8/26]

Praise the Ray!
Hazy IPA - 6% ABV

Oh! This beer makes us wish we could describe the aroma of fruit better! But, best bet is to smell it for yourself. The perfect glowing yellow haze hopped with generous amounts of Azacca, Mosaic and Moutere hops results in a glass full of dry, juicy, tropical fruits! Give yourself to the Ray.

[PACKAGED: 4/8/26]

Seek and Enjoy
Hazy Double IPA - 8% ABV

While we never swore off making double IPAs and other big beers, we certainly haven’t spent much time dabbling anywhere north of six and half percent. Seek and Enjoy more than makes up for the wait! Made with a malt bill of malted and flaked wheat, flaked oats and a touch of pils malt. We triple dry hopped this ultra-pale haze bomb with crazy amounts of Citra and Nelson and fermented it with our unique house English strain. This beer is a saturated ride for the senses!

[PACKAGED: 4/22/26]

Palmanova
Venetian Pilsner - 5% ABV

Our take on the now classic Italian Pils, made exclusively with malt grown off the Venetian coast in Eraclea, Italy. Step mashed to achieve a crisp dryness while maintaining minimal color. We ferment the beer cold and lager colder to achieve a natural clarity. Hopped with a combination of Tet, Ariana and H. Blanc, our take is at once traditional and modern reflecting the place and the people that originated this beer.

[PACKAGED: 4/22/26]

Hot Dog Time Machine
Cream Ale - 5% ABV

Collab with Halcyon, Ladd & Lass, Big Time, Well 80, & Three Magnets

The question was, what is the perfect beer to drink at a hot dog eating competition? After tossing around ideas we came to a modern take on the classic Cream Ale of old. A blend of pils, pale and flaked corn with just enough hops to legally call it a beer and even a tiny dry hop! Fermented warm and under pressure to keep the yeast clean and quick. Lagered, for like way more than a week, then cold filtered for a crisp, clean and quenching drink! Perfect, we think, for soaking up all them dogs!

[PACKAGED: 5/6/26]

Blow the Whistle
West Coast IPA - 6.8% ABV

It’s official! Blow the Whistle! Named for the whistle atop our boiler and associated with a more than 100 year brewing tradition of blowing the whistle in Olympia, this beer celebrates the return of the Oly whistle! 5 ‘o’clock daily! The beer: lightly hazy WCIPA with loads of Citra, Citra Cryo and HBC56 hops! Pale and soooo juicy!

[PACKAGED: 5/6/26]

St. Sweeney
Irish Pale Lager - 4% ABV

We all love the other Irish beer that most craft brewers get into this time of year but we also love the other Irish beer most craft brewers don’t get into this time of year. Thus we present “St. Sweeney’s” Irish Lager! Given that “Irish lager” is stylistically indistinguishable from other lite lagers, we decided to Irish it up as best we could using all Irish malt and hops from the UK plus a touch of flaked barley. No such thing as Irish lager yeast and good old Oly it’s water! It’s as soft and crushable as an Irish Spring!

[PACKAGED: 2/25/26]

Victory Nap
WC Pale - 5.2% ABV

Collab with Bizarre and Holy Mountain

Our good buddies at Sisters and Brothers are turning ten and we had to make a beer about it!  But we didn't go it alone. We got together with a couple of our favorite Seattle breweries, Bizarre Brewing And Holy Mountain and settled in on a dry and crisp west coast pale pushing into XPA territory! Made with pils malt, Simcoe and Riwaka hops, and cool fermented, this beer is easy and refreshing while delivering big hop aroma. We can't wait to wash down so many Nashville Hot tenders with it!

[PACKAGED: 5/6/26]

Thora’s Hammer
Juicy IPA - 6.4% ABV

Thora’s Hammer is our collaboration with Crosby Hops’ Top Wire Beer Club, showcasing Thora, a booming new public hop variety developed by Crosby and the Hop Quality Group. Estate grown Amarillo and Cascade providing a classic big pine and citrus base, and dry hopped with loads of whole leaf Thora, yielding a tropical stone fruit thunderstorm! Thora's Hammer is soft and almost clear, drinking somewhere between a modern West coast and something more East.

[PACKAGED: 5/6/26]

Dive
Traditional Pale Ale - 4.2% ABV

Utilizing Linc Malt Baronesses English Pale Ale malt, hopped with Cascade and Elani, and dry hopped with Citra and more Cascade, making for a snappy pine and citrus showcase!

[PACKAGED: 3/25/26]

Under a Free Heaven
Dortmunder Export Lager - 5.4% ABV

The recent spate of Dortmunder Export lagers in the NW is a good example of brewers’ zeitgeist. A German beer style first brewed in the 1880s, it grew to be the most produced beer in Germany until the 70s when Pils took over the top spot. We used to be able to get DAB and a couple other examples shipped in ten years ago, but that seems to have stopped. To that background we give you Under A Free Heaven! Just step mashed German pils malt, Magnum and Hallertau Tradition hops, cold fermented, spunded and unfiltered. Prost!

[PACKAGING: 6/3/26]

Color Out of Space
Hazy IPA - 6.6% ABV

Our space to play with hops in the haze! We keep the malt to a minimum focused on body and mouthfeel thanks to generous helpings of oats and wheat. This round we went with a bright trio of Rakau, Citra and Nelson resulting in a gush of tropical fruit flavor!
